We have been fortunate to have good numbers of slot sized Chinook this August.
Brined in demerara sugar and coarse salt with a shot of hot sauce for 48 hrs. Air dried for 12 hours and smoked with cherry wood.

Fresh Coho, first put on the pellet smoker for about 1/2 then finished on the grill. With a jasmine rice pilaf and fresh carrots from the garden with garlic and butter.

Charcoal grill time! Lamb Shish kebabs, coho, ling cod head, and zucchini on the grill. Beans from the garden in a veggie tomato sauté. Tomato salad from the garden. Faro grain salad with parsley and red onions.
