I ended up spending about 20 hrs of longboard sanding before I re sprayed it, pretty happy with the results

Gelcoat is definitely more durable. Just like the paint on your car, it's gonna scratch if you hit it. I'm not concerned, I'll just repaint it in a couple of years

When you mount those seats will they be flush or slightly proud of the stern edge of the box so you can sit on them facing back as well?

40sq feet of foam poured and the holes glassed up, I might actually be able to get it on the water soon lol
