My favourite salmon recipe so far is: slather on some "bc salmon marinade" from save-on, its a kinda teryaki-like sauce, then i dice up some bacon and pineapple and top the salmon. on top of all that i grate some mozzarella cheese. then barbeque to perfection. interesting thing is the cheese absorbs fish flavour and tastes amazing while the fish doesnt pick up too much flavour from the cheese but is left really moist. i dont know if someone has already tried this but at home i call it "bonzai salmon"

Cabezon Tacos with lime dressed coleslaw, and chipotlé mayo. While it was pretty good, I think next time I do cabezon it will be steamed dim-sum style, and be dipped in garlic butter similar to crab or lobster...

Beef Pho - roasted and them simmered beef bones for 6 hours in fish stock (salmon heads and carcasses), roasted onion and ginger. Strained the broth and served it with rice noodles, green onions, bean sprouts, Thai basil, and hot chilli paste.

salmon rolls.jpg

salmon cut into strips, dipped in "Famous BC Salmon Marinade", rolled around strip of havarti cheese, wrapped in bacon, tied, ends dipped in brown sugar, seared on both sides then left under tinfoil to finish

What is for dinner?

I am not much on cooking but my dog seems happy with it.
