Turned out very very good!

Cheers

Marinated, slow roasted pork shank, baked potato, Okinawa sweet potato, mix vegs.
Washed down with a beer and a shot of Tito’s.
If you have never had Okinawa purple sweet potatoes try one. They are great.

Safeway $5 Fridays had Tito's 1.75 lt on sale for $32 us. Can't go wrong with that price.

I marinated a piece of spring in soy sauce, maple syrup, mirin and Dash lemon pepper. Cooked on a cedar plank in an air fryer ( first time using the plank).
Served it with 3 cheese tortellini covered with Pesto sauce. Turned out great - the boss said she loved it!

Put a little bit of Axis deer backstrap on the BGE. Killed a couple on Lanai in October. Should have prepped it in a 135°C sous vide for an hour or two, as it’s a bit tougher than my usual ribeye…. but the flavor is terrific. The green crap is there for decoration. Hahaha

Had company so I spatchcocked a bird and smoked for 4 hours at 250. Served with roast root veg, cabbage, and a fennel salad.
