What's for dinner tonight ?

Had a massive Free Range Chicken, stuffed & roasted in the clay baker 2 nights ago:

Took the leftovers and combined with the previously saved Pheasant & Partridge leftovers, potatoes, onions, chanterelles (2 jars) and a handfull of mixed veggies to create a fine Stewp:

Today's effort will be making those leftovers into meat pies...

Have yet to make up my mind for tonight...

My own personal tradition is to spend the evening of Remembrance Day hunting solo.
It is my personal time to reflect on the many from my own Family Line that served - the ones that did not come home, and those that did forever changed.
And my time to thank them for what they endured such that I have been able to live my life in the manner I have.
Something I have done for decades, and something I will be doing again this very evening.
Dinner plans hold until I get back from that, so likely a tad late.

So this isn't a dinner per se. But we made a new batch of chilli oil combining a couple/few recipes together to make a really a good finishing oil, gyoza/dumpling sauce umami bomb.

Has shallots, ginger, thai chillies and garlic that are all fried in hot oil until they start turning colour/get a bit of crisp/texture, these are then filtered out and set aside. Oil cranked back up and then poured over a mix of dried mushroom, crushed peanuts, miso paste, everything bagel/sesame seeds and a few star anise. Once that cools the set aside ingretients are put back in and a healthy couple of tablespoons of MSG added.

This is going to be the mainstay chilli oil in our house.
 
Had a deep fried whole chicken, brined 2 hrs coarse sea salt, (amazes me how much residual blood is drawn out) patted and air dried for a bit then deep fried @ 350/ 30mins super moist mmmm.:)
