What's for dinner tonight ?

They truly are pillows of happiness. When they're done right. Store bought are junk. Disgusting in fact. Hard, chewy, floury junk.
Store bought are deplorable. There’s a hole in the wall in Montreal by Fairmount Bagels that sells a huge container for $5. Spicy or regular, with a ton of parm. They’re real good, but yours look better!
 
Seared spring with baked scallop and braised chard & leeks on rice. Smashed cucumber salad on the side.

Also made some nuts chili oil, it’s unreal

Did up a few racks last night , grilled hard then basted in my signature “ goo “ ( Dijon , garlic , anchovy , oregano , paprika , cumin , lemon zest ) , with a orzo salad ( sundried Tom’s , spinach , artichoke , capers , cherry tomatoes, shallots in a vinaigrette made with the sundried tomato oil ) and some charred cabbage
