How to refinish my filleting board

My filleting board needs a tune up. I scrub and bleach it but the grey/black is winning. Any suggestions?

Redfisher has the right idea: clamp it down and use a sharpened scraper, holding the tool at an angle as you pull it. Take off all the old, stained surface. It can look like new!

For day-to-day cleaning, we mix 2/3 water, household bleach and a few drops of soap in a spray bottle, then brush and rinse. A little bleach goes a long way. Every month or so, scrub with hydrogen peroxide to get the blackish cut marks gone.
 
It did not melt
The issue with sanding is that many small scratches remain, trapping more dirt and bacteria. If scraping is too slow, very light passes with a power plane can work or use a thickness planer, if you have access to one. Again, proceed very lightly. You'll restore a smooth, clean, sanitary surface.
