Herring recipes?

So herring season is fast approaching.
What are some good recipes you use?
I love to catch them but are looking for some other ways to use them besides bait.

My Dad loved to pan fry the milt and spread it on toast !( Grand Dad was a fish Monger on the high street back in the old country ) I never acquired a taste for it , but smoked on a cracker or pan fried with tomato sauce mmmm....
 
here's a very easy way to do them which I really like and do often, I gut and scale them, slather them inside and out in a nice olive oil, salt and pepper inside and out, put them on an oiled baking sheet in a hot oven 375-400 deg. for 15-20 min. about 1/2 way flip them over if you want, they won't dry out if they go a bit longer, I sometimes do them on the bbq . Just serve with fresh lemons to squeeze. great finger food and so simple.
