Halibut crusted with parm and crushed pork rinds. Air fryer mode in gas range. Broccolini sautéed with slivered garlic and onions.

I find the air fryer to be more forgiving on cook time for fish, less likely to overcook. Crust browns and crisps nicely, fish stays light and tender. Bonus for the oven version: plenty of room for large racks, we fed 8 last night with one batch.

Funny you mention that, I do notice that with the full size convection oven that the time frame from just underdone to overdone can happen very quickly, so at that point you really have to monitor it. I use this chef's grade probe to check internal temperature, I love this thing. And yes, large portions are a breeze in the oven.

What temperature do you aim for with halibut? It goes from tender and delicious to tough rubber in a flash.
 
Yes I usually pull out fish at 130 for smaller portions and 125 ish for the thicker ones as they have the mass to keep increasing internal temp while the rest of the meal is plated.
 
So I caved and bought an air fryer. I was the one who posted a few times that if you have a convection oven at home, you already have an air fryer albeit on a bigger scale. However, curiosity got the better of me so I watched a video from America’s test kitchen and I bought the one they recommended. The Instant vortex +6 quart. Colour me impressed. It really works well.

This was tonight‘s dinner.

Instagram told me that you can cook softboiled eggs in your airfryer. 375 for 6 minutes. Someone report back.
 
Cant report on the eggs but I did see this pasta chips recipe online and had to give it a go… just cooked pasta with olive oil, parmasan and seasonings of your choice, air fryer at 400 for 15 minutes tossing half way through.
