i make a pretty basic ceviche...
1 red onion
4-5 avocado
a bunch of cilantro
1-2 cups seafood of pretty much any kind.
fresh squeezed lime juice, usually 6-8 limes
2 cloves fresh garlic
sea salt to taste
soak seafood (shrimp) in fresh squeezed lime juice for 20 -40 mins rolling gently a couple times.. this will cure and firm them,
chop red onion/avocado and garlic in a lager mixing bowl, squeeze more fresh lime juice and gently mix.
gently mix in the shrimp, lightly sea salt to taste. let stand for 1 hour or more covered and keep cool. gently stir or turn over 1-2 times
mix in a few fresh cilantro bunches 10 mins before serving.
