Whats in my belly?

Belly burn in a P. Cod. Classic clue that the whole round fish sat too long on a deck before getting bled or cleaned. Belly burn is also why high-end herring bait packers “starve” their herring prior to freezing up in tray packs. If they aren’t starved in a pen, their bellies turn red from enzymatic action on the feed in their bellies and their flesh turns mushy

I didn’t know that coho can suffer that same fate but it stands to reason, especially with a gut full of euphausids....good to know...but rule of thumb with ALL salmon—-clean immediately after applying the wood shampoo
