I have had decent success fishing Kemp Lake. It isn't hiding or anything but it does have some decent (2-3lb) fish. Haven't been out that way for freshwater in a few years though.

buy a back roads map book
Bear Creek and Diversion Resivour hold fish and you can put a small boat into them, they are by Jordan River. Boneyard Lake is good, but the gate is closed, you can mountain bike 5 K to it, and has decent fish. Kemp is a good simple drive up bet.
