looking for good BBQ recipe for small rainbow and cutthroat

going camping next monday and im planning on catching some trout
and a good recipe would be great because fryed is getting a little boring:)
 
Mayo
dijon
vinegar (malt, rice, wine, you choose)
Salt a pepper
Combine and coat fish.

50//50% Panko bread crumbs and crushed regular chips.
coat the coated fish

place on foil, bake//grill at 375!

Tastes phenominal.

C'mon, Rainbow trout never gets boring. Stones recipe looks pretty good. We're heading off for two weeks of salmon fishing then we're going to take in a week of Trout fishing. I'm going to try his recipe then!

A halibut recipe, but would probably be good with trout too, and could do it over a fire. Dice some tomatoes, red and yellow peppers, lime, mix with some olive oil. Could add a little onion and garlic, diced peppers if you like heat (or even better, some canned chipotle peppers, diced up fine). A little white wine if you have it...not too much, don't want it to watery.

Put chunks of fish in double wrapped foil ... could be a filet, or could be a whole fish if thin. Add a few spoonfuls of the mix, seal it up tight. Put on the coals to cook slowly, low heat. Don't over cook it! Better a little under done than over done.

Do up a little cold salsa to put on top once cooked....diced purple onion, mango, avocado, cilantro.

Substitute in whatever you have, for both the packets and the salsa.

KD, pork and beans, canned stew, spam, hot dogs. Let the little trouts go free so someone else can catch them.

Lemon Buttered Herb Cutthroat Trout Recipe

Ingredients:

2 whole cutthroat trout (about 8 to 10 ounces each), cleaned and gutted
1/8 cup melted butter
1/2 teaspoon shredded lemon zest (peel)
1 1/2 tablespoons lemon juice
1/8 cup onion, chopped fine
1/2 tablespoons snipped fresh rosemary or tarragon (optional)
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper


How to cook Lemon Buttered Herb Cutthroat Trout:

1. Fish should be thawed (if frozen) with the head, fins and tail cut off. Wash fish in cold water and dry.
2. Preheat oven to 425°F (220°C).
3. With the skin side down, open the fish like a butterfly.
4. Mix melted butter and lemon juice in a small bowl. Brush half of this mixture over the fish and reserve half for later.
5. Combine the onion, spices, lemon zest, salt and pepper. Stir until mixed well and dust the onion mixture over the open fish.
6. Close the trout and place on a baking dish large enough to accommodate the fish comfortably.
7. Brush the remaining butter mixture over the closed fish. Put in the oven for about 15 to 20 minutes.
8. Fish will become flaky. Test with a fork.
9. Decorate with parsley flakes and serve with lemon wedges, if desired.
