Seasoned my pieces and allowed to marinate all afternoon. Turned the Bradley on high and tossed the fish in with 2 pucks. 3 hours later the fish went into my dehydrator for 2 hours on high. It came out perfect. Best part is I learnt my Bradley racks fit perfectly into my dehydrator.
It's such a nice change to traditional smoked fish. I wish it was a bit spicier but still its very good. I used a Jamaican Jerk premade spice from the grocery store. I was afraid to use to much as I didn't want it to be salty. Product said to use more but being that it was going to be dehydrated I thought it might of been to much.
