Bryce, will you need to have access available through the hatch ?
If not just glass in a piece of marine grade plywood and paint

If you need to install a hatch for access to bilge pumps, filters etc., there is good selection of hatch covers that should meet your needs. They all seem to sit proud of the mounting surface however and would require inletting of the above mentioned plywood to sit flush. I have found that over time they leak around the external seal (probably from flexing with all the constant walking on them) and require resealing periodically.

Check out any of the boats that come with I/O or a factory pod.
Mine has a flush (not proud) hatch on hinges. It is a great storage compartment.
