Here's a good one. First of all fillet the salmon then make one slice like your going to chunk it but don't cut through the skin,second cut,cut through skin'both cuts being about 1"wide then butterfly it by putting the skin to the inside,meat on the out then simply fire up the Q and place direcly on grill spinkle each with brown sugar and sesame seeds and voila the brown sugar will carmelize and then it's dinner time cheers m.t.;)
