Coho or Sockeye

Hi guys, I am planning on doing a batch of candy and maybe some jerky this weekend (using the instructions from The Big Guy). Normally I smoke spring, but this year most of my fish is sockeye and coho. Which would you suggest I use, and why?
 
For candy and jerky, coho would be great.

I would save the sockeye for dinners, sushi, cold smoking etc.

Otherwise, it is up to your supply and preference. Maybe try a bit of both and compare.

Keep in mind that sockey is such a delicate flesh. The Coho will fair better during the smoking process.

Cold smoke for sockeye and or fresh for dinner.
 
Pretty much what I expected re coho being better for these purposes. This is the first time I've had sockeye (I am out the door with it too) and I do find it delicate. Thanks for the input guys!
