What's for dinner tonight ?

Last night wanted something "home style" so out came some whitetail steaks some beautiful oyster mushrooms I picked that day, broccolini and baked potato..I pan seared on a cast iron pan turned it down added some butter, garlic, fresh rosemary basting it for 2 mins let it set for 5 min perfect med rare like butter cutting it.....

Not tonight's supper (that's still in the smoker :) ) but it was a gooder a few nights ago. My kicked up version of King Shrimp and Spot Prawn fettuccine Alfredo with homemade apple juice/herb brined bacon, parmasano regiano and grand padano cheeses, white wine, heavy cream, butter, garlic, and some herbs and spices. Made my wife a buttermilk/herb marinated barbecued chicken breast version while the rest of the family had the seafood version. Homemade baguette herb garlic butter with aged organic cheddar cheese toast as well.

I cut and froze most of my 15lb brisket for later use, but made 3 strips for a relatively quick dinner.
Dry rub, cook in foil in the oven for 3 hours, reheat on the grill with barbecue sauce. Tender and easy.
While I was at it I rendered all the trimmings on the stove.
I sprinkled some salt on one little piece just to see what it was like. It was a bad move that turned into a prawn/crab/popcorn/pistachio can't stop nibbling experience.
The fat will be filtered and used for something.

Sat out on the patio of Sea Glass restaurant. Looked at @carpeweekend’s boat while sipping some cold beers. Had Cajun chicken wings and jambalaya. Hot sun on my face. Hot wife across the table. No pics to show you, but trust me it was the best meal I’ve had all year!
 
Pork back ribs with baked potato homemade pasta salad and a frosty Belgian Whit beer. Pork ribs were dry rubbed then apple and oak wood smoked open air for 4 hrs at 225 then taken out, basted with barbecue sauce and fresh herbs, wrapped in foil then put back in for another few hours till tender and juicy with an inch of bone sticking out of the meat. Then unwrapped and finished on open flame on the barbecue to caramelize the sugars in the sauce.

Man, I have to say this. I've been stalking and drooling over your foodie posts for quite some time. You have an insane ability to take local ingredients and create something that looks wonderful in every way. I think all of us here have a love for the harvest, the preparation, and the consumption but you my friend are on a totally different level. When I look at your posts it's like I can smell and taste the ingredients through my PC. Thanks again and please keep posting.

Hey man thanks a lot for that Very nice to hear and glad you enjoy the pics and posts. I enjoy sharing my love for food and good local ingredients. We are very fortunate to live here with so many great food sources from farms, ocean, lakes, rivers etc.
 
I think we've got enough burgers to last us through Summer now :p

Double home ground burger for supper tonight. With double cheese, homemade apple bacon, sauteed onions and mushrooms, lettuce, tomato, ketchup and mayo on a toasted brioche bun. Served with home cut double fried fries and a frosty Heineken.
