Ian, I use the spoon part of my knife to pull the blood from the area along the rib cage.
 
The live well idea could be used to ugrade your catch size for a few species like salmon, crabs, prawns and so on. Just kill it, bleed it and put it on ice.
 
No bonk...just bleed in fish box then into cooler of ice. Bleed out better with no-bonk.

Gut within couple of hours if long day is planned.

Tried the spoon down the vein thing in the cavity yesterday, too easy. Figure I don't actually need to worry about it much as we are usually back at the Resort and have the rib bones filleted out in under 4 hours anyways - but it's always fun to learn something new - thanks.
