It would be dependent on a large number of factors including the genetic stock that they come from. If you're consistently not impressed with a similar shaped fish that are likely from a US Hatchery, then it is simply the genes that are carried by that fish. Think about it like beef, we have selected for out favourite flavours of beef and bred them together to create Kobe etc... Like sly_karma said, they put on too much weight through natural foraging for the hatchery rearing to make a difference in the meat.
