So after the Fisherman Helping Kids With Cancer herring sale...I ended up with 40lbs of super fresh herring, I decided to take some and pickle it.
I bagged some bait
Cleaned some up
Through them into a mild salt/sugar brine for 72 hours
Freshened em for 20 minutes while I prepped the pickling brine (boiled) and sliced the homemade dills
Then filleted the little buggers
Rolled em up and into the jars with sweet onions and the brine...all the while having some great Spring Fever pickled salmon...
