Poor Man's Lobster (a twist on Halibut)

Here is a simple and tasty way to change it up for Halibut. Tried it a couple days ago and it was actually really good.
Not sure if it tastes like lobster but that is what it is called.

1 med to large pot of water (As you would use to boil spaghetti).
1/4 cup salt
1/4 cup white sugar
2 heaping tablespoons of unsalted butter.
Halibut cut into chunks (we did about 1.5 x 1.5 inch chunks some bigger.

Bring water to a rumbling boil then stir in salt ,sugar and butter.
Let boil for a couple minutes stirring well to get butter, salt and sugar well mixed in water
Add Halibut chunks. Wen fish floats to surface it is pretty much done.the bigger chunks needed a minute or so after floating.
It took 5 minutes total(from time we dropped the fish) to cook enough to serve four.
Nice and moist and a little rich with the butter. will definitely do it again

We also prepared some melted garlic butter as we would for prawns and had it on the side for dipping.

Cheers: Ray
