Halibut Kill with one Slice

There was this old crotchity fisherman that took me out as a kid in Rupert. When he gaffed the hali and pinned it against the boat (yep he didn't pull them in) he then took a fillet knife and just behind the cheeks made a single stab into the fish, which instantly paralysed it - then he tailed it an let it bleed out overboard. I have never had anyone since that could explain how he did it - and he really didnt share any of his fishing secrets. Can anyone share insight on this skill?

Sounds like he just cut the spine, no spine, no nerve impulses to operate anything.

sounds similar to what they do with Tuna, I think they are trying to stab the heart?

I figured it was the spine... but does anyone have insight where this "magic spot" is to drive the knife into... cause seeing me hangin over the rail with a pissed off halibut on a gaff in one hand and a flailing fillet knife in the other hand - well lets just say its not a pretty site and someone could lose an eye!
