Boil it in seasoned water to help easily remove fatty layer.....remove from water, then remove fatty layer followed up by your favourite rub then hang in the smoker all day. Remove from smoker put into a roasting pan and cover really well with foil. Slow cook in oven till completely cooked and enjoy. They are so tasty. Now you have tons of smoked meat to make sandwiches for that long day on the water.

Unfortunately they don't or I would turn it into sausage. Has to wait in his freezer til Easter. Just have to keep my fingers crossed he doesn't get "inspired" before then.! LOL
