We have made fresh garlic and herb salmon sausage and it was hit.
We did something like this - https://en.petitchef.com/recipes/starter/homemade-salmon-sausage-fid-832651 minus the smoked salmon
We also made salmon curry sausages and patties. Another good mix!!
Experiment and you will be surprised. We used to use pinks but have used coho and chum as well.

I have tried these salmon burgers/patties and they were a hit. They would probably make a pretty good sausage also.

I made salmon pepperoni/snack sticks and they were great. I think I added about 25 or 30% pork to it for some fat and texture. I'm sure salmon sausage would be good too.

I dont have any pics. The pepperoni didnt last more than a couple of days and it was devoured. I didnt use a recipe but I have since found a snack stick recipe that I like. I'll post it when I get back to my computer.

Yeah, it's a big batch.
It's easy to reduce though. Just simple math. I keep my batches to about 10 or 20 lbs max at a time.
