Ran across this outfit seling smoked Rockfish locally http://www.ocean-amber.com/ and since I have a bunch in the freezer so I though WTH?
A web search brings up a lot of references from the Eastern USA where Striped Bass (Morone saxatilis) is called Rockfish.
I've eaten the stuff it's much softer and delicate than any of our Sebastes species, has anyone here monkeyed around with a Rockfish brine at all?
