Just a heads up guys, Quality Foods in Comox has 6 oz vacuum sealed/frozen Ahi Tuna for $3.50 each............ Ahi does not come cheaper then that! I purchased 20 packs to smoke myself, now to find the best tuna brine recipe...........:)

Things that make you go hmmmmm.
If it was Albacore it'd be less questionable.
Any tuna I'd go for low sodium brine.

Thanks Old Blue, I went with Wolf's recipe......... I will post results in a couple of days. The plan is to make some candy and finish some in the smoker.......:)

I was checking out the Ahi at Quality Foods today. It's about the same size as a hockey puck. For 3.50 a puck I was wondering if it's worth it. Also wondering about it's origin. I bet that poke was great though.;) eman
