Smoked Steelhead

Hey fellas, its come time to smoke up some Steelhead. Should I go exactly the same as Salmon or tweak things cause now were talking about a large Rainbow trout? Any suggestions/comments r appreciated. Thanx
 
When smoking trout I've always used a wet brine made of cold water, lightly salted with white or yellow sugars. Zero garlic..... A bit of onions. Otherwise I do the exact same as I would salmon. When it comes out of the smoker and is still warm I hit it with a small amount of fresh cracked black pepper.
 
I just smoked the 2nd place fish in the walley hall derby with the spring i got last weekend and they both turned out amazing. Dry brine 4 to 1 demera brown sugar and fresh choped garlic
 
I agree. Garlic with trout is too much. Just do like Sockeye dry brine 4-1 and freshen in cold water before smoking. Otherwise it will be too salty.
