Red spring turned whiteish when sprayed with fresh water?

I try to never get fresh water on the meat. I think it affects the flavour. I just keep my knife clean while filleting and straight into the vacuum bag. Also avoid getting slime on the meat. as for your question, i havent seen that happen.
 
If you bleed the fish first this may not happen?
