Processing / Transportation Question

Timing of the catch is everything.
I dont like leaving fish on ice more than 2-3 days before cutting and processing.
A Tyee processed at st Jean's will cost a month's wages !

Thanks for the reply Scott,
I'm thinking that if I catch a nice fish I will,gut,bleed,remove gills,fillet and then do slices to the skin and then on ice.
Then freeze in 2 fillets one with tail and head on.

Just have to locate a freezer in CR.

Take it to Campbell River Seafoods. They will process and freeze in 24 hrs.
