Okay, this is way out there, but works for me. Get a pot of oil ripping hot, to the point of smoking. You will usually need to do this on a crab cooker, as I find an electric stove is not hot enough. Then, cut your halibut into 1"x1" cubes. Put them in a basket, put them in the oil, then jump back. In about 2 minutes, pull them out, they will have thier own crust to them. ROll them in cajun chicken wing seasoning, and enjoy, they make great dippers, crispy outside, nice and moist inside. The fryer really blows up, so be carefull! I do it outside.
