Island girl's best salmon recipe

I created this on a wim this summer with all my fresh herbs. Everyone that tried it loved it and requested the recipe. So here it is to share... All measurements are approx. It still turns out fantastic. I have bbq'd on foil and cedar plank. Cooked on foil in the oven is also excellent.

1 fillet of salmon ( I always debone)
1 cup regular Mayo ( no low fat!)
1/4 tsp lemon zest
1 TBS lemon juice
2 TBS finely chopped fresh rosemary
2 TBS fresh chopped Basil
2 TBS fresh chopped Italian oregano
1 TBS fresh chopped parsley ( this is optional)
Mix the above into the mayo.

Take your fillet and sprinkle with COURSE SALT and fresh ground pepper. Don't use fine salt!

Cover it with the Mayo mixture.

Bbq or oven on foil or cedar plank
enjoy!!
