Chicken Lollipops

Chicken lollipops. I took the idea from the lamb pops at Vij’s. These are the full drumstick size, not the chicken drumette size.
They would be great for an appetizer or a pre-meal teaser if you have a group of people over, but just making them was fun and presentation is always cool too. Convection oven, 18 minutes at 375. I usually aim for 165 internal but because the meat was bunched up a bit more I went a little higher internal and as you can see it made it to 177 which is perfect. If you have guests over, they might freak out a bit by something we would munch our way through with us knowing the internal temperature was safe.

Ohh man so many things you can do with that, great idea
Test kitchen was another success, these were freakin' sweet! The moisture inside the lollipop was really noticeable, I suppose it is from the skin wrapping all the way around and trapping it in.
 
I bet, those look awsome. I'd like to toss those on the traeger

When you run the knife around the leg and pull the majority down to the thick end, be mindful that the skinny bone you cut through that runs along the big bone is now a potential needle.
