This is a good recipe; mind you our snapper is yellow eye, nevertheless it'll work on just about any white fish...

Yellow eye tacos; shake deboned fish pieces in seasoned flour, dip in beaten egg & roll into Panko...fry in oil or butter.

I agree with you on the roasted yellow eye or any rockfish. I find fried rockfish to be very tough and stick to either steaming or baking rockfish. As someone lucky enough to fish for snapper in Florida and rockfish in BC they are totally different fish for table fare in my opinion. Both can be excellent but I think the tropical snapper are more versatile for different cooking methods.
