Pepperoni recipe needed

The 5lb stuffer from Princess is a pile of crap, only lasted 1 batch of sauasge, Plastic gear stripped..Went back and traded it for the bigger one and it has been awsome. It has done over 300lbs of sauasage since Ive gotten it

I have the Weston 7 lb ( 3 litre ) vertical sausage stuffer.. I like it.
All metal gears and 2 different gear ratios. It is hand crank so you should have a friend to help.
I had only used the stuffer attatchement that came on my grinder before and it did a sh*tty job even though electric.
