Seared Salmon with Caramelized Onions

4-3oz portions of salmon (skin on)
4 tbsp butter
1 small onion chopped
1/4 tsp chopped ginger
1/2 cup white wine
1 tsp red wine vinegar
1/4 cup fresh dill chopped
1 tsp soy sauce

Heat 2 tbsp butter in pan and sear salmon over a high heat, keeping the fish slightly undercooked (3 mins each side worked for a 2" thick piece). Remove from pan and keep warm. Melt butter and add onion and dill, cooking until darkened. Add remaining ingredients and cook for 5 mins. Remove salmon skin, return salmon to pan and cook until done, flipping once. Serve with the onion mixture drizzled over the top...
This will be great with halibut, if I ever learn how to catch those ******s!
