Teriyaki sauce

I prefer this to the store-bought. As close as I can get to my Japanese mother-in-law's recipe. (Can never get a detailed recipe out of her. "Just add ingredients X, Y, Z until it tastes like mine ...")

Ingredients:
- 2 tsp sesame or vegetable oil
- 2 cloves of garlic, minced
- 1 medium yellow onion, minced
- 1 tsp sesame seeds
- 1 tsp chilli pepper flakes (optional)
- 1 tsp fresh ground ginger (optional)
- 1 cup mirin
- 1 cup sake
- 1 cup soy sauce
- honey or sugar to taste
- 2 tbsp corn starch

Directions:
1. Fry garlic, onion, sesame seeds, pepper flakes and ginger in oil until translucent, about 10 min.
2. Add mirin, sake, soy sauce and honey and simmer for about 10 min.
3. Make a paste of the cornstarch and 1/3-1/2 cup of the mixture. Add to mixture and simmer for 10 minutes.

Keep in a jar until needed.
