Tequila Mahi Mahi (or other white fleshed fish)

Here is a really good simple recipe! The original recipe calls for white wine, but I didn't have any so I used tequila instead. It turned out great! The recipe is for mahi mahi, but any white fleshed fish would taste delicious with this recipe. Rockcod, Ling, Yelloweye...

Here it is:

Ingredients:
• Mahi Mahi fillet(s)
• Can of diced tomatoes w/green chilis
• Butter
• Lemons (for juice)
• Tequila (or white wine)
• Onion
• Salt & pepper
• Jar of garlic

Preparation:
1. Preheat oven to approx. 400 degrees.
2. Place fillet(s) of Mahi Mahi on tinfoil, add slices of butter and spread garlic on top.
3. Dice onions and juice the lemons. Place onions on top of fillet(s) and add the juice.
4. Open can of diced tomatoes and green chilis. Place on fish. Add salt and pepper to taste.
5. Pour some tequila on the fillet(s).
6. Cook for approx. 30 min. Or until fish flakes.
 
kthomas: I used this recipe for baking some ling cod Tuesday night. The fish turned out great (this recipe is very similar to a method I already use for white fish). I used white wine, not Tequila. The cooking time for me was ~32 minutes.
