Salmon in the Bradley

Nice work. Looks good. How long do you think that'll keep for? (assuming you wanted to store some and not scarf it all!)
 
This batch will probably last three weeks after my friends get into it. I'll be doing some coho fishing in Quatsino and Mahatta River next week, so there will be more smoking to be done. Over the winter, I take out salmon and smoke it as needed because I find when you freeze smoked salmon and then thaw it, the texture gets a bit softer.
