Pulled Pork Jalapeno Poppers

Traditional part of a Gringo Baja Christmas eve get together Pulled Pork Jalapeno poppers and Tequila (Hornitos) for shots and 1.75 LTRS of Kirkland (Costco) Tequila for Margaritas. If you are curious the 1.75ltrs of really excellent Margarita tequila will break the bank at a staggering $12.25 CDN. Definitely a great deal!!
So pulled pork poppers
8 oz philly cream cheese
diced onion
1 clove minced garlic
1 tbsp chilli
20 Jalapeno's
8 oz shredded pulled pork-cut or diced fine
shredded jack or pepper jack cheese
4 oz real bacon bits (Costco)

Method
Split the Jalapenos length wise and remove all seeds and veins. You might want to wear gloves if you are a Wuss or would like to go to the bathroom in the next 24 hrs without screaming!! LOL
Blanche the jalapenos in boiling water for 5 minutes-immediately drain and set aside to cool.

Mix the philly and all ingredients EXCEPT Jack cheese and bacon bits
Spoon Philly mixture into Jalapeno halves-do not heap!!
Top with shredded Jack or pepper jack cheese plus bacon bits.

Preheat oven to 350 F and cook for 10 min or until cheese is melted. Enjoy!!! Serve with a Tequila shot and a Margarita!!! Smile--you'll be seeing Santa Soon!!

Awesome!!! And great choice of Tequila!!! That Kurkland is good enough Tequila to sip lol!!!! But if you already have Hornitos. Well then... Poppers look yummy.. :(:(:(
 
I was asked for a real Baja Margarita recipe-- be careful with this one!! Rim a glass with lime and dip in salt. Juice of 2 limes, 2 oz tequila ; 11/2 oz controy (orange liquor). 1 oz Damiiana (Optional Mex. Liquor) Splash of orange or pineapple juice serve over ice cubes or use a blender and make a slushy. Take the car keys away!! LOL
Damiana liquor is slightly reminiscent of Greek OUZO-give it a try and use sparingly til you're sure
