Potato-Crusted Salmon with Dill

Here's a good one a friend passed on to me last week:

Potato-Crusted Salmon with Dill

Ingredients

* 2 Russet potatoes, baked (microwave works fine) and chilled
* 2 tbsp horseradish
* Some diced white/red onion
* 2 tbsp oil
* Salt and pepper
* Salmon filets

Directions:

* Preheat oven to 375°F.
* Grate potatoes through the large holes of a box grater into a medium sized bowl.
* Stir in horseradish, onion, oil and salt and pepper, mixing well.
* Pat crust onto top surface of filets rougly 1 cm deep, and place in a baking pan or on a baking sheet.
* Bake until salmon is cooked through and the crust is golden and crispy, about 15 minutes - you may need to broil for a couple of minutes as well.

Dill Sauce:

* 2 dill pickles, chopped
* 1 small bunch dill, chopped
* 1 green onion, chopped
* 1 tbsp dijon mustard
* Couple of spoon fulls of mayo/miracle whip and couple of sour cream (enough of both for 1/2 cup).
* The juice from half a lemon.
* Lemon pepper

saw that one on tv. chef at home (foodnetwork) fired it up! awesome my kids loved it! that dill sauce is top notch!!!
 
I tried this recipe last night. It was awesome. My only comment is that the recommended cooking time seemed too short. I would say that 20-25 minutes would be better and still would not overcook the fish. Wow what a great recipe!!!
 
I made this last night and it went over very well with the whole family. I would recommend it to anyone.

Needed a new recipe so came to the site and found this one and gave it a try. it was awesome! Made the sauce too and it was great! Thanks Juandesooka.....even the kids ate it

This would be the family's favorite.....hands down

brought the recipe home a couple years ago and has turned out to be the go to card...a real yum

for a swede...... potatoes, salmon and dill...it doesn't get much better
