as im gonna use some for making sausages
as for smoking you need to inject with a brine and let sit for min 7 days then heat and then smoke, If you look at bacon thread there is some of the bacon and hams on there that I do
 
Thank you for the heads up regarding the pork sale! Picked up a couple pieces for the family and will be butchering and vacuum packing them tonight.
