Pad Thai

I love pad thai, especially with lots of big, flavorful spot prawns. This is the best recipe I've found, and definitely worth trying. I haven't tried it with all the exotic ingredients, because I haven't found them yet, but even without it is very good. And don't shy away from using way more prawns than called for.

That is one of the exotic ingredients i do have. And it does last forever: the block I have was given to me by friends who moved away 3 or 4 years ago!
