Just getting a leg up on dinner;)
We aren't hosting dinner so I smoked some turkey drumsticks to take over to the family dinner, as there will be a few leg men at dinner.
Using a copy cat recipe that is supposed to be just like the drumsticks you can get at Disneyland.

Just about to start making my 'famous' mushroom-cranberry cream sauce for turkey. Takes a couple of hours but the family demand it.

Sorry, it was a busy weekend but here's the recipe well in time for Christmas! Best if you try it ahead of time so you understand the timing and flavour balance, the ingredients are inexpensive.

Melt 2-3 oz butter and saute a finely chopped shallot and 3 minced garlic cloves for 2 minutes. Add 2 cups sliced brown mushrooms and saute until tender. Add 1/2 cup beef stock and 1/2 cup sherry, stir and simmer until liquid is reduced by half. Add 2 cups of whipping cream and 2 tbsp lemon juice, simmer until again reduced by half, sauce will thicken until it starts to coat a spoon. Stir in 2-3 tbsp cranberry jelly, taste and adjust with lemon juice or jelly until the sweet/sour balance is to your liking. Serve.

Notes:
  • typically this sauce takes about 60-80 minutes to make. You may need to take it off the heat or reduce heat to minimum if it is thickening up sooner than the rest of the meal. Overcooking will cause the milk fats to separate or 'break'.
  • can be made ahead of time, but cream sauces are tricky to reheat. Use a double boiler and go slowly or it will separate.
  • A handful of whole cranberries added near the end provides colour and interest.
