I like to dress halis and lings and bring them home on ice to avoid any hassles with size/measurements.
The problem is you have to deal with the trimmings when garbage day is 4 days away.
S0 I scrubbed the heads really well to remove slime and any red bits and threw them and the frames in a big stock pot with some onion, celery, carrot, bay, salt pepper corns and other herbs, and filled the pot with hose water as the secret ingredient.
I have a Salton electric hot plate that I can set to 195*F, so I set that up in the garage to keep the stink and heat out of the kitchen and let it steep for about 2 hours.
I strained it through a collander, then let it cool and strained it through a sieve.
Turned out realy well.
8 pickle jars into the freezer.
