A tad too much to cut and paste the whole shee-bang. Too many posts and too many pictures. That and of course I am a wee tad lazy ;)

Cold smoked tuna is fantastic, when you can find it. Having reviewed you preparation, I am looking forward to trying out both the tuna and halibut. I thank you for your significant documentation of the process to help those of us not as talented. All I need to do now is to acquire the raw materials.
