Future Dinner File...

Day before yest a good Buddy wandered by and dropped off a couple large whole pork hinds for us. As we have now consumed the last Bear and Russian boar hams, I knew exactly where these were headed!

Used to always do my own until one time I took some bear hams into Pete's Mountain Meats. Pete did such a fantastic job with them (could not tell the difference from pork!) I now take all of our hams to him for brining and smoking. These should be ready upon my return from the offshore...

We have used some of our harvested strawberries to make strawberry margaritas.
I would have posted pictures but they were consumed way too fast.
 
Nog , you are the king of the doilies, and mouth watering culinary treats. But it’s the doilies that get every time.

Where is the money shot with one of those bad boys sliced off.
 
I had time to do IronNoggin a small favour and in return he offered some treats form his hard earned stores.
First up was a section of blacktail backstrap.
2 days marinade and then on the grill with some stuff from our garden (not the yellow pepper yet).
It was a hit- tender and in no way gamey, whatever that means.

We had something to celebrate at home so I wanted to treat my daughters to a Lobster feast. We love Lobster and haven't had it for a few years. Wife doesn't eat much seafood so I'll make her a make up dinner of smoked baby back ribs on Sunday lol. I found some commercial Lobster fishermen in Nova Scotia that sell their catch directly to retail customers and fly it overnight delivery. They are family owned business and fishermen. Believe it or not it's cheaper even with the shipping to buy it from them than it is to buy it here in Vancouver from the guys that fly it in. Trying to support other fishermen and other fellow Canadian's from buying from these guys.

I made 3 different Lobster meals; steamed with two flavors of clarified butter, Lobster poor boy rolls, and cream cheese Lobster dip. All of them turned out amazing and my daughters enjoyed it as much as I did.

I also made a couple chocolate blueberry zucchini loafs for desert. Made with ingredients from my garden and with honey from a no spray organic farm close to where I live.

Are those the Hawaiian rolls again?

No I tried to find them but they didn't have them. The rolls are a butter roll. The other ones are brioche hot dog buns and are very good for the poor boy rolls but they like to kind of deflate if left too long. They were baked this morning. Got them at Cobb's. For the rolls I cut a skim of bread off each side and toast them on each side in some butter in a pan before making the rolls. Keeps the outside crispy and the inside still soft and warm.
