Smoked Yellowtail and Yellowfin tuna collars and bellies.

Wife doesn't care for the looks of the bellies and collars, so we are putting together the salmon net pens at Pilar Point Harbor tomorrow, so smoked some up, tossed one, I think the seal went bad and smelled fishy. No brine, dusted with brown sugar, mixed the meat with cream cheese, sour cream, hot sauce and green onions for a spread tomorrow. Alder pellets.
