Salmon Smoking question

Have been upping the temp gradually and am currently at 175f and there hasn't been any smoke yet that I have seen. took a piece out and it seems to be well on its way. what do you guys do for finishing it. take it right out, put it on the counter over paper towel and let it cool then vacuum seal it or unplug the smoker and let it gradually lower in temp then take it out.
 
They r not smouldering or producing any smoke
 
You have a problem with your element in your smoker or with the power going to it. Are you using an extension cord?
 
No extension chord but it was smoking once it was up to 175 but then the white spots started forming on the fish. Pit the temp up 10 degrees every 20 minutes from 140.
