Tried this recipe on a couple of Pinks this week and it's fantastic. Super easy to make:

INGREDIENTS
1 1/2 lbs Salmon fresh
1/2 cup Soy sauce
1 teaspoon Ginger grated
3 cloves Garlic crushed
1 teaspoon Honey
1 tablespoon non-iodized salt
1 tablespoon cayenne (or to taste)
1 teaspoon hot peppers

NSTRUCTIONS
Mix soy sauce with ginger, garlic, spice and honey. Cut salmon into strips, about 3/8 inches by 4 inches. Dip into soy sauce mixture and place on a rack, set over a cookie sheet. Place in a 150-degree convection oven (or regular one) for about 24 hours or until dehydrated, or dry in a dehydrator. Store in an airtight container in the refrigerator.

Tried to edit this post, but getting a VB script error....

Instead of dipping the fish into the soy mix -- I placed the mix in a vacuum pack bag, sealed it and left the fish in the mix over-night. It really took on the spicy taste.

You know the fish is done when it's translucent.
